I think I've probably shared this recipe before on my blog, but it's a staple in our household for when I feel like cooking something sweet, that's also super quick and easy. My sister gave me the recipe when I was first engaged and trying madly to fill up my blank cook book with tried and tested dishes.
I love that you can literally throw the ingredients into a bowl, mix by hand with a spoon and bake. It's a no fail recipe and both of my children love it when a sugar hit is needed - good old fashioned baking, so good.
1 cup self raising flour
1 cup coconut
1/2 cup sugar
2 tablespoons cocoa
125 grams butter (melted)
Pop all the ingredients in a bowl and stir until combined. Spread out firmly onto a greased slice tray (or use baking paper) and cook in a moderate oven for 15 minutes. Ice with chocolate icing while still warm & sprinkle with coconut.
